This is a cookery corner which we will be presenting monthly with a recipe suitable for caravan cooking. Today I have chosen warm chicken salad. This will impress your caravan friends as it appears to have taken a lot of preparation and a lot of cooking but, believe me, this is a long way from the truth.
Ingredients
- 12 oz's cooked chicken
- 4 sticks celery
- 4 spring onions finely sliced
- 1/2 pint mayonnaise
- 2 teaspoons lemon juice
- Salt and pepper
- 4 ozs strong cheddar cheese - grated
Topping
- 1 pkt potato crisps - crumbled
- Little paprika if desired.
Measure all the ingredients into a bowl,with 3 ozs of the cheese. Mix together, turn into an ovenproof dish. Top with remaining cheese, crisps and a dusting of paprika and cook at 425 f/220c or gas mark 7 for 15 mins until hot but not boiling. Serve with crispy bread and a green salad. I can bet that someone will ask for the recipe!!!
