Great salad to make in your caravan - so quick and easy!
Ingredients
1 large or 2 small pomegranates
800g couscous
6tbsp olive oil
Juice of two lemons
1 litre boiling chicken stock or water
4 tbsp chopped fresh mint or coriander
Method
Place couscous in a bowl, add boiling stock or water. Cover with film. Leave until all liquid is absorbed, use a fork to separate the couscous after liquid is absorbed.
Cut the pomegranate in half and scoop out the seeds.
Stir olive oil, pomegranate seeds and lemon juice to couscous. Finally add chopped mint or coriander.
Decorate with a slice of lemon and herb leaves.
