The site continues to be owned by Mrs Bowles but her children will be running the new company with Bridget & Jacky taking over all the day to day management roles. The park will be managed with the same ethos and we will try to keep any changes to a minimum.

Cookery Corner: Cheese On Toast

Great salad to make in your caravan  - so quick and easy!



1 large or 2 small pomegranates

800g couscous

6tbsp olive oil

Juice of two lemons

1 litre  boiling chicken stock or water

4 tbsp chopped fresh mint or coriander 


Place couscous in a bowl, add boiling stock or water. Cover with film. Leave until all liquid is absorbed, use a fork to separate the couscous after liquid is absorbed. 

Cut the pomegranate in half and scoop out the seeds.

Stir olive oil, pomegranate seeds and lemon juice to couscous.  Finally add chopped mint or coriander.

Decorate with a slice of lemon and  herb leaves.

Cookery Corner

This is a cookery corner which we will be presenting monthly with a recipe suitable for caravan cooking. Today I have chosen warm chicken salad. This will impress your caravan friends as it appears to have taken a lot of preparation and a lot of cooking but, believe me, this is a long way from the truth.


  • 12 oz's cooked chicken
  • 4 sticks celery
  • 4 spring onions finely sliced
  • 1/2 pint mayonnaise
  • 2 teaspoons lemon juice
  • Salt and pepper
  • 4 ozs strong cheddar cheese - grated


  • 1 pkt potato crisps - crumbled
  • Little paprika if desired.

Measure all the ingredients into a bowl,with 3 ozs of the cheese. Mix together, turn into an ovenproof dish. Top with remaining cheese, crisps and a dusting of paprika and cook at 425 f/220c or gas mark 7 for 15 mins until hot but not boiling. Serve with crispy bread and a green salad. I can bet that someone will ask for the recipe!!!
